Winemaking Details
The fruit for this wine was picked in January 2019, following a hot growing season. After crushing, the premium free-run juice was drained & cold settled. This was followed by cool fermentation, using aromatic yeast, in stainless steel.
Tasting Notes
The older of our two Semillons is now starting to display some softer aged characteristics. It has aromas of citrus and lemongrass, with the palate displaying lime and brioche notes. Drink now or continue to age until matured into the classic aged toasty, honey, Hunter Valley style.
Superb with seafood.
