Winemaking Details
Picked in March 2019, the grapes were crushed and warm fermented in an open, stainless steel fermenter, with regular pumping over of the skins. The wine was then pressed to older oak barriques, where it underwent malolactic fermentation and maturation.
After 20 months maturation, the wine was fined and filtered before undergoing further fermentation in a pressure tank and bottling to retain its effervescence.
Tasting Notes
This outstanding Hunter Valley Chambourcin is vibrant red in colour and has enticing aromas and flavours of sweet red berry fruits, cloves, liquorice and pepper notes. Delicious with a roast, a cheeky chocolate dessert or just great company.
